Back before Thanksgiving, Kamala Harris posted a recipe on Facebook, “Kamala’s Cornbread Dressing.” Kudos to whoever manages her social media because it stuck with me for months. I kept thinking that if her cornbread dressing recipe was SO GOOD she’d publicize it to millions of followers, then I should try it, right?
Finally, I was stumped one night for a dinner recipe and decided to make it. I didn’t realize that it was a bit more involved than my throw it in a dish and bake type of meal, but overall, I’m so glad I made it.
But next time, I’m going to want to make it on a day off, like on Thanksgiving! And, make the cornbread the day before.
How to Make Kamala’s Cornbread Dressing Recipe
To start, it’s very important that you read the first step ahead of time. Unfortunately, I did not do this and so I made the cornbread right before mixing, which means no time to cool. Whoops! My cornbread was not crumbly.
I also thought buying Stove Top cornbread would make life easier. I’m not so sure that panned out. Next time– real cornbread… from a box or ready-made at the store maybe? Whatever makes life easier.
Speaking of pans, I crumbled and cooked the sausage. The house smelled amazing!
Then I removed the sausage and cooked the chopped apples and vegetables in the same pan.
While those sautéed, I started mixing all of the remaining ingredients.

Once the vegetables and apples were done and everything was mixed, it was time to pour the mixture into my 2-quart baking dish.
Unfortunately, I was about an hour in at this point and my kids were getting fairly hangry (hungry + angry). So, everyone was eating before I could get a picture. BUT, this is what I was able to capture.
Since there was meat, vegetables, fruit and carbs in one dish, I used it as our main dish instead of a side dish. Also because this makes A LOT of food and I didn’t want to eat it for the next 5 nights.
Would I make this recipe regularly? Nope; too time-consuming for this mama. BUT, I’m definitely adding it to this year’s Thanksgiving table. It was a nice change from my regular stuffing recipe!
Also, if you didn’t catch my note about making the cornbread the night before so it cools ahead of time, here’s your reminder! It still very flavorful despite my cornbread hadn’t cooled all the way, but my version was a bit soggier than I would’ve liked.

Kamala Harris’ Cornbread Dressing
Equipment
- Knife and cutting board
- Sauté pan
- Large baking dish (2 quarts worked well)
Ingredients
- 2 8-oz packages Cornbread mix
- 1 lb Spicy pork sausage
- a little Olive oil or coconut oil
- 2 Onions, chopped
- 2 Apples, cored and chopped
- 4 Celery stalks, diced
- 3/4 cup Chicken broth
- 1/4 cup Unsalted butter, melted
- 1/4 cup Fresh parsley, chopped
- 2 tsp Sage
- 1/2 tsp Thyme
- 1/2 tsp Rosemary
- to taste Salt
- to taste Pepper
Instructions
- Bake your cornbread mix according to the instructions on the package. This can be done the day before.
- Once the cornbread is cooled, crumble it.
- Take the sausage out of its casing, crumble it, and brown it in a little oil.
- Once the sausage is cooked, use a slotted spoon to remove it from the pan. Set it aside.
- Sauté the vegetables and apples in the remaining oil in the same pan.
- In a large bowl, mix the cornbread crumbs, cooked sauge, sauteed vegetables and apples, melted butter, herbs, and chicken broth.
- Put the mixture in a large baking dish.
- Bake at 375 degrees F for about 40 minutes.
