I love getting to dinnertime and having the main part of the meal already done. When the days are crazy busy, I default to a handful of SUPER easy crockpot recipes. Here are three of them.
These recipes are so easy, I pretty much cook these crockpot recipes at least once a month. And let’s be honest, I often put it together while the kids eat breakfast or I’m on a work call. They’re THAT easy.

All three recipes come from the Fix-It and Forget-it Lightly slow cooker cookbook, but I’ve modified most of them slightly when noted. None of them require chopping vegetables or pre-cooking the meat. Yay!

Also, who loves a time saver? Me!! You’ll see in every photo below that I always use crockpot liner bags when I cook. Even if the bag leaks, it’s significantly less clean-up than without using it at all.

Chicken Italiano Crockpot Recipe
This is a good change from spaghetti sauce with meat. And, it’s good on its own with sides or add to pasta.
The original recipe calls for 2 chicken breasts, but I’ve found there’s enough spices and sauce to cover 4 chicken breasts without doubling everything else.
This is probably the maximum number of ingredients I use in a crockpot recipe. But since it’s all pantry items, I just add the meat to my grocery list and usually have everything I need.
Once the chicken is all cut up, just put all the spices on top.
Then, dump the entire jar of spaghetti sauce on and stir.
Add the lid, turn on the crockpot and you’re done in ~6-8 hours!
I usually serve over wheat pasta and add some peas or green beans. Use the sauce in the crockpot if you want that extra tomato flavor!
Chicken Italiano
Ingredients
- 4 Large, whole boneless, skinless chicken breasts, each cut into 3 pieces. The recipe says 2 chicken breasts, but there's plenty of sauce for more.
- 3/4 tsp. Salt
- 1/4 tsp. Black pepper
- 1/2 tsp. Dried oregano
- 1/2 tsp. Dried basil
- 2 Bay leaves
- 26 oz Jar low-sodium meatless spaghetti sauce
Instructions
- Place chicken in the bottom of your slow cooker.
- Sprinkle seasonings over the chicken.
- Pour sauce over seasoned meat, stirring to be sure the chicken is completely covered.
- Cover. Cook on low 7 hours or on high for 3 1/2 – 4 hours.
- Serve over pasta.

Easy Beef Crockpot Recipe
The ingredients for this one are so simple that I don’t need to reference the recipe when putting together my grocery list.
The original recipe calls for 1 lb. of meat and one can of each soup, but this recipe is so good that I usually double it so that everyone gets enough meat and we have some leftover.
Once it’s all mixed together in the crockpot, then add the lid and cook on low for 4-5 hours.
We typically serve with brown rice and a vegetable side, both of which are very likely cooked in the microwave.
Easy Beef
Ingredients
- 2 lbs. Beef stewing meat, trimmed of fat
- 2 10 1/2-oz. can French onion soup, undiluted
- 2 10 23/4 oz. can 98% Fat-free cream of mushroom soup, undiluted
Instructions
- Combine meat and soups in slow cooker.
- Cook on low 4-5 hours.
- Serve over rice.

Easy Turkey Breast Crockpot Recipe
Why does turkey and cranberry sauce taste so good together? I try not to make this too close to Thanksgiving, but once January hits, it goes into my repertoire.
These are all of the ingredients you need in addition to the turkey breast.
Mix the extra ingredients in a separate small bowl then pour over the turkey breast in the crockpot.
Place a lid on the crockpot, turn it on low for 6-8 hours.
We usually serve the turkey with some vegetables, like asparagus, and brown rice or mashed potatoes. Or let’s be honest, mac and cheese, because why not?
Easy and Delicious Turkey Breast
Ingredients
- 1 Turkey breast, skin removed
- 15-oz can Whole-berry cranberry sauce
- 1/2 cup Orange juice
- 1 packet Dry onion soup mix
- 1/2 tsp. Salt
- 1/4 tsp. Black pepper
Instructions
- Place the turkey breast in the slow cooker.
- In a bowl, combine the remaining ingredients.
- Pour the ingredients mix over the turkey.
- Cover. Cook on low for 6-8 hours.

Thanks for this post! I’m always looking for new Crock-Pot recipes! The turkey one makes me wish that we had canned or even fresh cranberries available more than one month a year here!
