We got this oven-roasted sweet potatoes recipe from my kids’ school and since I had the ingredients, I figured it why not try it? Roast some sweet potatoes for dinner AND get in a measuring and oven safety lesson too? Sure!
What I didn’t anticipate is how DELICIOUS these would be. Friends, we make this recipe at least one time a month. It is so full of flavor!
The most time-consuming part is just peeling and chopping up the sweet potatoes. The recipe calls for 2 but I usually use 3 sweet potatoes so we have some leftovers for the next day. There is plenty of extra spice to go around.

Once peeled and sliced, I put the sweet potatoes in a bowl and add the oil then spices. There is no right way to cut these, except thicker pieces might require extra cooking time.
The original recipe said to put in a large ziploc bag and then shake it, but the kids LOVE digging their *clean* hands in the bowl and mixing it up. And honestly, I do too! Plus, it saves time.

Once mixed together, we spread out onto a foil-lined baking sheet. Any remaining oil spices at the bottom of the bowl, we spread onto the sweet potatoes before popping them into the oven.

Once done, they pretty much look like the did when you put them in but the potatoes themselves are obviously oven roasted and ready to eat.

Also, your house will smell amazing. Plate the oven roasted sweet potatoes and serve while still hot. Enjoy!
